Pumpkin Soup is a nutritious and healthy soup recipe which is pretty simple to prepare. Prepared with the goodness of coconut milk, pumpkin & cumin powder the mouth-watering recipe feels absolutely pleasant. One of the good points of preparing this easy recipe is that it needs simple ingredients that are easily available in the local market. The side dish could be served as the palatable pot luck dish which will, unquestionably, be enjoyed by all the guests. Enjoy this soup at your home with the dear ones.

Ingredients for Pumpkin Soup:
Pumpkin - 1/2 kilograms
Black salt - 1/2 tsp
Cumin powder - 1/2 tsp
Water - 2 cup
Salt as per the requirement
Coconut milk - 2 cup
Onion - 2
Butter - 4 tsp
Clove - 4
Ginger - 2 piece

How to prepare Pumpkin Soup:
Step 1) Clean the pumpkin in running water & peel it. Now slice the pumpkin in thin slices & put it beside. Now slice the onions & keep beside till further required.

Step 2) Take a deep bottom vessel & heat butter into it. As the butter is heated, have some cloves & saute the mix. Now add the grated ginger and sliced onions. Saute the contents for a few mins.

Step 3) Have salt and sliced pumpkin in the vessel & saute until the pumpkin becomes tender. When done, remove the vessel from flame. Then take the mixer grinder & add the contents of the pan into the mix, followed by two cups of water. Grind this mixture to the paste.

Step 4) Now transfer the paste into a deep bottom vessel & allow it to simmer. Add cumin powder, coconut milk and black salt. Stir finely to mix the elements. Garnish it with coriander leaves & then enjoy hot.
