Jain Malai Kofta: Kofta with raw banana

Ingredients required to make Jain malai kofta

For kofta
Paneer           - 1 cup
Fresh cream - 1 tablespoon
Raw banana (Boiled and peeled) - 2
Cashew nuts - 15 - 20
Raisins - 10 to 12 (soaked in water for 10 minutes)
Chirongi nuts            - 1 teaspoon
Maida - 2 tablespoons
Finely chopped green chilli - 1
Ginger powder - ½ teaspoon
Oil - For deep fry

For curry

Paneer           - ½ cup
Thick cream - ½ cup
Beaten curd - ¼ cup
Butter - 1 tablespoon
Tomato puree            - ½ cup
Shredded cabbage - ½ cup
Milk - ½ cup
Oil - 1 tablespoon
Maida - 1 tablespoon
Chirongi nuts            - 1 teaspoon
Cloves - 2
Cardamom - 1
Cinnamon - 1” stick
Peppercorns - 2 to 3
Red chilli flakes - 3
Garam masala powder - ½ teaspoon
Salt - To taste
Sugar - ½ teaspoon
Bayleaf - 1 (break into pieces)
Chopped cabbage - ¼ cup

The process to make malai kofta

For koftas
  1. In a bowl, mix cashews, raisins, charoli seeds and malai.
  2. In a bowl add bananas, chilli, paneer, flour, salt, and ginger. Mix and mash them and make round shape balls.
  3. Make a depression at the center of the portion and add the dry fruit mixture. Reshaped the balls again after joining the edges.
  4. Refrigerate them for 10 to 15 minutes and then deep-fry them until golden brown.

For curry

  1. Grind curd and paneer together and keep aside.
  2. Dry roast the maida until pinkish.
  3. In a pan, heat the oil and add dry spices, cabbage, and stir-fry for a few minutes.
  4. Then add tomato puree, sugar, salt, and dry masalas. Bring it to boil.
  5. Add paneer curd paste and continue to stir.
  6. Then add roasted flour (dissolve in 1/4 cup water).
  7. Add malai and cook until whiteness dissolves.
  8. Cook on medium heat till the gravy gets thick.

Final process to make malai kofta

  1. Before serving, boil the gravy and add koftas into it.
  2. Pour into a serving dish, garnish with grated paneer.
  3. Your Jain Malai Kofta is ready.
